Cabbage
Description
Cabbage, or Patta Gobi, is a hardy cruciferous vegetable with dense, waxy leaves tightly packed into a heavy, round head. It has a mild, peppery bite when raw that mellows into a sweet, savoury flavour when cooked. Known for its incredible shelf life and satisfying crunch, it is a versatile staple in kitchens worldwide.
Culinary Versatility
In Indian cuisine, it is famously shredded for Patta Gobi ki Sabzi often tempered with mustard seeds, curry leaves, and turmeric. It is the crunchy backbone of Indo-Chinese dishes like Manchurian and Chow Mein. Beyond stir fries, cabbage leaves make excellent wraps, fermented sauerkraut, or a refreshing, zesty slaw.
Nutritional Benefits
Cabbage is exceptionally low in calories but rich in Vitamin K (for bone health) and Vitamin C (for immunity). It is loaded with Antioxidants and sulphur containing compounds that support heart health and reduce inflammation. Its high Fibre content makes it excellent for digestive regularity.
Storage & Care
Keep the whole head in the fridge crisper drawer. If you use only half, wrap the remainder tightly in cling film to keep the leaves from drying out. Use within 1 to 2 weeks.
Pro-Tip: To keep cabbage crisp and avoid the "sulphur" smell often associated with overcooking, sauté or steam it quickly on high heat. If using it in salads, shred it finely and toss with a little salt and lemon juice 10 minutes before serving to soften the texture slightly while keeping the crunch.
