Description
Dudhi, also known as Lauki or Bottle Gourd, is a smooth skinned, pale green vegetable with a succulent, snowy-white interior. It has a remarkably mild, cooling flavour and a high water content, making it one of the most refreshing and easily digestible vegetables in the world. When cooked, it becomes tender and translucent, absorbing the spices and aromatics of any dish it is added to.
Culinary Versatility
Dudhi is a true kitchen chameleon. It is the heart of the comforting Dudhi nu Shaak (a simple Gujarati stir fry) and a essential ingredient in Sambars and Dals. Beyond savoury curries, it is famous for its use in sweets like the rich, milky Dudhi Halwa. Because of its soft texture, it is also grated to make light, steamed Muthias or crispy Koftas simmered in spicy tomato gravy.

Composed of nearly 96% water, Dudhi is incredibly hydrating and low in calories (15kcal per 100g). It is a staple in Ayurvedic diets for its alkalizing and cooling effect on the body. It is rich in Dietary Fibre, which supports smooth digestion, and contains essential minerals like Magnesium and Potassium that promote heart health and help manage stress.
Storage & Care
Store whole in the refrigerator’s crisper drawer. If you have used only half, wrap the cut end tightly in cling film or foil to prevent it from drying out. Use within 5 to 7 days.
Pro-Tip: Always taste a tiny piece of the raw gourd before cooking. If it tastes bitter, discard it immediately, as bitterness in bottle gourds indicates a high level of toxic compounds (cucurbitacin's). For the best texture in halwa or koftas, grate the Dudhi and squeeze out the excess juice but don't throw the juice away! Drink it with a pinch of salt and lime for a powerful detox boost.
