Known for being more pungent and aromatic than its Bombay counterpart, this masala focuses on high-quality warming spices and floral notes to create a majestic, slow-cooked flavour profile that is synonymous with Hyderabadi hospitality.

The Secret Pinch: For an authentic result, use this masala to marinate your meat along with yoghurt, ginger-garlic paste, and plenty of fresh mint and coriander for at least 4 hours. This allows the sharp spices to tenderize the meat and infuse it with a "bottom-up" heat that survives the long dum cooking process.
