Description
Turia, also known as Ridge Gourd or Luffa, is a slender, deep green vegetable easily identified by its sharp, vertical ridges and rough skin. Inside, the flesh is snowy white, spongy, and incredibly tender. It has a naturally sweet, mild flavour that is far more delicate than a cucumber or zucchini, making it a soothing favourite in home cooked meals.
Culinary Versatility
Turia is a beloved ingredient in Western and South Indian households. It is most commonly prepared as a Turia Sabzi, simmered with soaked mung dal or peanuts to balance its soft texture. In Gujarati kitchens, Turia Mag Ni Dal is a classic comforting stew. Because it has a high water content, it cooks very quickly and absorbs the flavours of mustard seeds, curry leaves, and green chilies beautifully.
Don't Waste the Peel: The ridges and skin can be ground with chilies, tamarind, and roasted lentils to make a fibre rich, spicy Ridge Gourd Chutney (Thogyal).
Nutritional Benefits
At only 15–20kcal per 100g, Turia is excellent for weight loss and hydration. It is packed with dietary fibre and contains cellulose, which acts as a natural remedy for constipation. It is also rich in Vitamin C and Zinc, making it a great choice for boosting immunity and maintaining healthy glowing skin.
Storage & Care
Store Turia in a cool, dry place or in a reusable bag in the fridge crisper. It is best used when firm; if it starts to feel limp or rubbery, it has lost its freshness.
Pro-Tip: Use a peeler to remove only the sharp, hard ridges, leaving some of the green skin intact for better texture and nutrients. If the vegetable tastes bitter when sliced, discard it immediately, as this indicates high levels of cucurbitacin's which can be harmful. Use within 3 to 5 days.
