Description
Amla, or Indian Gooseberry, is a small, translucent green fruit with distinct vertical stripes and a hard central pit. It is famous for its complex "five flavour" profile: it starts sharply sour and bitter but leaves a surprising, lingering sweetness on the palate. Firm and fibrous, it is considered a "super fruit" in Ayurveda due to its immense healing properties.
Culinary Versatility
Amla is rarely eaten raw without seasoning due to its intense tartness. It is most commonly enjoyed as Amla Murabba (sweet preserve), spicy Amla Achar (pickle), or dried and salted as a digestive candy (Supari). In South India, it’s used in Nellikai Chutney or rice dishes. For a quick health boost, it is often juiced with ginger and honey or added to dals to provide a tangy "sour" element.

Storage & Care
Store fresh Amla in a glass jar or a breathable bag in the refrigerator. They can also be frozen whole or sun dried to preserve them for months. Use fresh fruit within 1 to 2 weeks.
Pro-Tip: If you find the raw taste too intense, drink a glass of water immediately after eating a piece of Amla the water will taste remarkably sweet! To prep for cooking, steam the whole fruit for 5 to 8 minutes; it will naturally sit apart into perfect, seedless wedges.
