Description
Baby spinach consists of young, tender leaves of the Spinacia oleracea plant, harvested at an early stage of growth. These leaves are smaller, thinner, and much sweeter than mature spinach. Usually sold pre-washed in breathable bags, it is one of the most convenient "superfoods" for a busy kitchen.

Nutritional Benefits
Baby spinach is famous for being incredibly high in Iron and Folic Acid. It is also a powerhouse of Vitamin K for bone health and Vitamin A for immunity. Because it is harvested young, it contains slightly less oxalic acid than mature spinach, making it taste less "earthy."
Storage & Care
Store the bag in the refrigerator's crisper drawer. To keep the leaves from getting slimy, you can place a piece of paper towel inside the bag to absorb excess moisture. Once opened, it is best consumed within 3 to 5 days.
Pro-Tip: If the leaves start to look slightly wilted but aren't slimy, drop them into a bowl of ice-cold water for a few minutes. This "shocks" the cells and brings back their crisp texture.
