Description
Yellow Haldi, or Fresh Turmeric, is a vibrant rhizome with a thin tan skin and a brilliant orange yellow interior. Unlike the dried powder, the fresh root has a crisp, juicy texture and a complex aroma that is earthy, peppery, and slightly citrusy without being overly bitter.
Culinary Versatility
Fresh Haldi is the star of the Rajasthani winter specialty Kachi Haldi ki Sabzi, where it is slow cooked in ghee and yogurt. It is also grated into Golden Milk, pickled with lemon and salt, or pounded into fresh masalas. Beyond its colour, it adds a "living" earthiness to dals and marinades that dried turmeric simply cannot match.
Nutritional Benefits
Rich in Curcumin and natural essential oils, fresh turmeric is a potent anti-inflammatory and antioxidant. It is widely used to boost immunity, purify the blood, and aid digestion. For maximum benefit, it should be consumed with a healthy fat (like ghee or oil) and a pinch of black pepper to increase absorption.

Store unwashed in a paper bag in the fridge. Use within 2 to 3 weeks.
Pro-Tip: Scrape the thin skin off with a spoon rather than a peeler to save the most flesh. To remove the inevitable yellow stains from your fingers or counters after prep, rub the area with a little lemon juice or cooking oil.
