It is a "complete" masala, meaning it contains both the base spices (like coriander and turmeric) and the warm aromatics (like cloves and cardamom), making it the only spice you really need to create a traditional, thick meat gravy.

The Secret Pinch: Meat takes longer to cook than vegetables, so add this masala during the slow-simmering phase. If you are pressure cooking the meat, add 70% of the masala at the start and save the remaining 30% to sprinkle in during the final "Bhuna" (frying) stage when the oil starts to separate from the gravy. This ensures both deep-infused flavour and a fresh aromatic finish.
