The Secret Pinch: For a truly professional depth of flavour, do not just boil the masala with the dal. Sauté 1–2 teaspoons of the masala in a separate Tadka (tempering) of mustard seeds, curry leaves, and dried red chillies in coconut oil, then pour it over the cooked dal and vegetables. This "blooms" the toasted spices and creates that irresistible aroma that hits you the moment the dish is served.
