Methi
Description
Methi, or Fenugreek, is one of the most beloved leafy greens in Indian cuisine. It is easily identified by its small, oval shaped green leaves growing in clusters of three. Methi is prized for its complex flavour profile a unique combination of earthy, nutty notes with a signature bitter finish that mellows beautifully during the cooking process.
Culinary Versatility
Methi is an incredibly versatile ingredient used in both its fresh and dried forms. Fresh leaves are the star of Methi Thepla, a popular Gujarati flatbread, and are essential for making Aloo Methi, where the bitterness of the greens perfectly complements the sweetness of the potatoes. It is also cooked with lentils to create a hearty Methi Dal or combined with cream and peas for the indulgent restaurant favourite, Methi Matar Malai. Beyond main dishes, finely chopped methi is often added to pakora batters to lend a sophisticated flavour to fried snacks.
Health & Ayurvedic Benefits
In Ayurveda, Methi is highly regarded for its ability to balance Kapha and Vata doshas. It is widely recognized for its medicinal properties, particularly its effectiveness in managing blood sugar levels and improving insulin sensitivity. Methi is also an excellent source of dietary fibre, which aids digestion and promotes heart health. It is traditionally used as a natural remedy to boost lactation in nursing mothers and to reduce internal inflammation.
Storage & Care
Fresh Methi is delicate and sensitive to moisture. To store, pluck the leaves from the thick stalks and wrap them in a dry paper towel before placing them in an airtight container in the refrigerator. This method keeps the leaves fresh for 4 to 6 days. Avoid washing the leaves until just before you plan to cook them, as dampness will cause them to turn slimy and spoil quickly.
Pro-Tip: If you find the bitterness of fresh Methi too strong, sprinkle a little salt over the chopped leaves and let them sit for 10 minutes. Squeeze out the excess water before adding them to your dish to significantly reduce the bitter bite while keeping the aroma.
