True to its name, this eggplant is the star of the traditional Bharli Vangi or Raviya. Its small size and sturdy shape make it perfect for "stuffing" simply slit them four ways and fill with a spicy peanut, coconut, and sesame masala before slow cooking. They are equally delicious when halved and tossed into a Gujarati Undhiyu or sautéed with potatoes for a simple, comforting sabzi.
